Apple Dorset Cake

Luckily for us, when we moved here back in 2022 the garden already had a few apple trees. Unfortunately we had to remove one and we pruned another back last year so it hasn’t produced anything this season… Which just leaves us with the Bramley apple tree. But boy oh boy did it produce! We spent a lovely afternoon as a family harvesting all the apples we could reach and managed to load up quite a few trays. The majority will be added to the cider press but we’ll save one crate for making pies, cakes and crumbles with.

Speaking of cakes… I thought I would share my favourite apple dorset cake recipe with you as it’s officially the season of the apple.

Apple Dorset Cake

Makes one loaf.

Cooking time: 45 minutes.

Ingredients:

  • 225g self raising flour
  • 2 tsp ground cinnamon
  • 1 egg
  • 115g butter
  • 115g light brown sugar
  • 7 tbsp milk
  • 1 bramley apple
  • 2 tbsp demerara sugar

Instructions:

Heat the oven to 180c and either grease, or line a 20cm loaf tin. Mix the flour and the cinnamon in a bowl, then rub the butter into the mixture until it resembles fine bread crumbs. Stir in the brown sugar then beat in the egg followed by the milk.

Peel and core the apple then cut into thick slices. Add the apple to the mixture and stir in before scooping into the cake tin. Sprinkle the top with the demerara sugar and bake for around 45 minutes (keep checking the centre and cook until the knife comes out clean, if it needs longer cover with tin foil to prevent burning)

Tips: Best served warm with extra thick cream!
